Harvest

Coffee cherries are maturing gradually on the trees. The selection of perfectly ripe cherries is the most important condition for high quality coffee. The harvest happens in several cycles during the “peak season”, that is after the first “fly crop”, between the first harvest of mature cherries and the harvest of the last ones, which have already lost their full aromatic potential.
